Tiramisu, one of the most well-known desserts of Italian cuisine, is a layered dessert prepared with coffee flavor, mascarpone cheese and cat tongue biscuits. The classic recipe, which is said to have originated in Naples, has been widely used in different cuisines in recent years, especially with its homemade version. In the traditional method shared, sweet coffee syrup is prepared with a mixture of egg yolk, sugar, coffee liqueur, cream and mascarpone.

Add coffee to boiling water and stir. Wait for it to come to room temperature. In a separate bowl, cook the egg yolks, sugar, salt and optional coffee liqueur using the bain-marie method. Obtain a dense and light-coloured consistency by whisking the mixture continuously over a pot filled with water. This process takes approximately 6-7 minutes. Whisk the cream and mascarpone in a separate bowl until thickened. Then add the egg mixture to this mixture and make it homogeneous with the help of a spatula.
Dip the prepared cat tongue biscuits into the coffee syrup for a short time and place them in my baking tray. Add half of the prepared cream mixture on top. Repeat the same process for the second layer. After the final layer is completed, let the dessert rest in the refrigerator for at least 4 hours. Make it ready for presentation by sprinkling cocoa on the surface before serving. Add cocoa to the tiramisu using a strainer before serving.
